Easy halloumi muffins with fresh herbs for an ideal brunch

Ingredients

  • 200 g halloumi cut in small cubes of 1cm
  • 100 ml sunflower oil
  • 150 ml milk
  • 2 eggs
  • 50 ml milk cream
  • 250 g flour of all purposes
  • 2 table spoons baking powder
  • 1 table spoon salt
  • ½ table spoon black pepper
  • 1 table spoon of dried mint
  • 10 leaves of localeaves apple mint finely chopped
  • 1 localeaves coriander finely chopped

Instructions

  1. Preheat the oven to 170 ° C in air and line a muffin pan with 12 paper liners.
  2. In a bowl, pour all the ingredients for the muffins, except the mint leaves, the coriander and the halloumi. Mix until the ingredients are combined. Finally, mix in the mint leaves, coriander and halloumi.
  3. Spoon the batter into the muffin liners and bake for about 20 minutes, until the tops are golden and a toothpick inserted into the centre of a muffin emerges clean.
  4. Let them cool a bit and serve.
